1Handful Coriander
1 tbspThai Fish Sauce
1 tbspTomato Puree
3 tbspSoy Sauce
1Ginger
2 cloveGarlic
350 gramsChicken
1Rice
1 canCoconut Milk
1Red Onion

Finely chop garlic and add to pan with coconut milk.

Boil water to cook rice.

Blitz all other ingredients except the chicken to form the curry paste.

Add chicken to the coconut milk and fry until mostly cooked. Add curry paste.

Remove rice from heat and serve with curry.
