
Cooking Instructions

Boil water for pasta.

Roughly chop the pancetta.

Mince the garlic cloves.

Brown pancetta in a frying pan.

When the pancetta browns, sauté the garlic in the fat. Add some EVOO if there isn't enough.

Beat the eggs.

When the pasta is cooked, save one cup of pasta water and drain.

Put pasta back in the pot and add the egg mixture as well as the pasta water.

Add pancetta and garlic, continue to mix with the heat off.

Add the black pepper and grated cheese.

Eat immediately!
