Ingredients

  1. 1 & 1/2 cupRaw Rice –
  2. 3 cupsWater –
  3. to tasteWhole Spices
  4. 4 Cloves
  5. 2 inchCinnamon –
  6. 2Bay Leaf
  7. 3Marti Moggu
  8. Pastes
  9. 1/2 tspGinger Garlic paste –
  10. 2Green chilli paste
  11. To tasteSpice powders
  12. 1/4 tspTurmeric powder
  13. 1/2 tspRed Chilli powder
  14. 3/4 tspGaram Masala
  15. 1/2 tspRoasted cumin powder
  16. Vegetables
  17. 1 cupBeans, 1 inch chopped
  18. 1/2 cupCarrot, 1 inch chopped
  19. 1/2 cupPotato cubes
  20. 1/2 cupFresh Peas
  21. 3/4 cupOnions. julienne
  22. 2 tspOil
  23. 1 tspGhee

Steps

  1. 1

    How to make the Pulao

    Wash and soak the rice for 10 to 15 mins.

  2. 2

    Prep the vegetables and chop, keep it aside.

  3. 3

    If the pastes are not ready, grind now.

    In a pressure cooker, heat the oil and ghee. Add the bay leaf, all the other whole spices saute well.

  4. 4

    Next, add the onions, saute till it turns colour. Now add the ginger garlic paste and green chilli paste.

    Continue stirring till it turns colour. Now add diced vegetables, salt and turmeric powder. Simmer for 5 mins with lid covered.

    Now add all the spice powders, combine everything well.

    Next, add the water and bring to boil. Stir everything well and check seasoning.

  6. 6

    Add the drained rice and give a stir.

    Cover with pressure cooker lid and cook for 3 whistles.

  7. 7

    Once the pressure falls down, fluff with a fork and transfer to the hot box.

  8. 8

    Serve hot
