Remove the guts, heads, and central bones from the fish. Run your finger along the edges to separate the flesh, then pat dry with a paper towel.

In a bowl, crack the eggs and add salt, chopped parsley, and the beer. Beat everything together well.

Heat a skillet over medium heat with plenty of vegetable oil. When the oil is hot, dredge the fish in flour, then dip in the beaten egg mixture. Fry the fish, and when the edges turn golden, flip them to cook the other side.

Once the fish are cooked, transfer them to a paper towel briefly to drain, then place them on a serving plate. Ready to eat!
