Ingredients

One
  • Rice- It can be freshly cooked or left over
  • French beans or any other vegetable you have
  • 1hard boiled egg
  • 1large onion diced
  • 3 clovesgarlic
  • 2large tomatoes
  • 2 tsptomato paste
  • Coconut milk
  • Spice mix- Red chili, paprika, ginger, curry powder, turmeric(optional or as you please)

Steps

  1. 1

    Hard boil your egg for about 15-20 mins. Put in some cold water when it is ready

  2. 2

    Saute your onions and garlic till translucent.

  3. 3

    Add in your tomatoes and tomato paste. Give it a good mix and let it cook for  a few minutes.

  4. 4

    Add in your spices and salt. Let them cook before adding some coconut milk.

  5. 5

    Add in your vegetables and let them cook for  a few minutes

  6. 6

    Unshell  your egg and slice it. You can leave it whole if you please

  7. 7

    Add it into your curry and let it cook. Taste to see if you need to adjust your seasoning.

  8. 8

    Cook under low or medium heat  for 2-3 minutes before turning off the heat

  9. 9

    Serve with rice or whatever you please. Enjoy
