Preheat the oven to 375°

In a large bowl cream together the butter and sugar.

Beat in the egg.

Mix in the peanut butter and vanilla until it's smooth and creamy.

Now stir in the flour, salt, and baking soda until completely combined.

Put in it the freezer until it starts to get a little hard just so it's easier to roll into balls.

Roll the dough into balls then roll them in sugar.

Place them on the cookie sheet and press down slightly with a fork.

They'll cook for about 10-12 minutes.
