Ingredients

  • 2 tbspExtra virgin olive oil
  • 1 1/2 tspGround ginger
  • 3 cloveChopped fresh garlic
  • 1 1/2 cupChopped onion
  • 2 cupRed lentils (rinsed)
  • 5 cupVegetable stock or Water
  • 1/2 tspSalt
  • dashBlack pepper

Steps

  1. 1

    In a medium pot add lentils and stock/water. Bring to a boil.

  2. 2

    Reduce heat to simmer and cook on low heat, stirring frequently until lentils are soft.

  3. 3

    In a medium saucepan saute onions and garlic in olive oil, until onions are tender.

  4. 4

    Add the onions and garlic to the cooked lentils and stir in ginger and salt. Add pepper to taste.
