First chop the 1/2 onion and fry in skillet.
Next add garlic and chili powder and corn oil and cook down a few minutes.
Strain & rinse Pinto beans and add to the skillet and cook for 3 minutes then add the chicken stock.
Add the salt & pepper and then taste at this point to determine flavor you like.
Simmer for about another 4-5 minutes and begin to mash the beans in the skillet with potato masher.
Continue until they are to your liking.
Add butter and keep stirring and mashing until they are at the correct consistency. Add cilantro for garnish!
