Ingredients

4 servings
  • 1/4 cupOlive oil
  • 1 tbspButter
  • 2medium onions sliced thin
  • 2 cloveGarlic chopped
  • 1/2 lbHam cut into half inch cubes
  • 6 sliceBacon cut into half inch pieces
  • 1/2 cupWhite wine or apple juice
  • 3/4 cupBeef broth
  • 1Bay leaf
  • 1 cupHeavy cream
  • 1 cupFreshly grated Parmesan cheese
  • 1 lbuncooked spaghetti

Steps

  1. 1

    In a large skillet heat the oil and butter over medium-low heat until the butter is melted

  2. 2

    Add the onions, garlic, ham and bacon

  3. 3

    Cook covered stirring ocasionally until the onions are soft about 25 minutes

  4. 4

    Increase heat to moderate high and cook mixture uncovered stirring constantly until most of the liquid has evaporated and onions begin to brown about 10 minutes

  5. 5

    Add wine or apple juice and stir scraping up the brown bits at the bottom of the pan

  6. 6

    Add the broth and the bay leaf and simmer stirring until mixture is reduced slightly about 8 minutes

  7. 7

    Add cream salt and pepper to taste and cook stirring until thickened

  8. 8

    Remove skillet from heat and discard bay leaf

  9. 9

    Stir in cheese and keep sauce warm and covered

  10. 10

    In a pot of salted boiling water cook spaghetti until al dente

  11. 11

    Drain spaghetti well and in a large bowl toss with sauce
