This is a great breakfast. I tried to duplicate flamers' recipe but its probably a bit different. This would be good with some jalapeno added to the peppers too.

This is a great breakfast. I tried to duplicate flamers' recipe but its probably a bit different. This would be good with some jalapeno added to the peppers too.
Steps

Add 1tsp oil to first frying pan and heat at 75%.

Dice onion, green pepper, serrano peppers. Take the seed out of some of the serranos if you want to make it less spicy.

Fry veggies in the first frying pan flipping periodically.

Crack 3 eggs in a bowl, add a splash of milk, a bit of salt and beat with a wisk.

Heat second frying pan at 60% and add some oil.

Pour eggs into frying pan and fold in half after about 4 minutes. Cook for another minute until cooked through.

Repeat the last steps to make a second omlette.

Spoon out avacado and crush. Add a little salt and garlic salt.

Put omelettes on plate and cover with pepper mixture. Then spoon a quarter cup of salsa on top of each omlette.

Enjoy! This recipe was inspired by Flamers restaurant in Boston. I ate their Mexican Omlette for breakfast 3 days in a row while on conference. I highly recomend trying it out next rime you're there. They are on the main level of the prudential center.
