Turn oven on to 180°C
Grease a baking tray and dust with flour. - 2
In a large bowl, place flour, baking powder, salt, sugar and margarine. Rub together until it resembles crumbs.

Beat eggs and vanilla essence and pour into the flour mixture. Mix together and knead for about five minutes to a soft dough.

On a floured surface, roll out the dough with the palm of your hands, don't flatten it too thin or too thick. Then cut with a round cutter.
Place the cut dough on a greased baking tray. - 5
Lightly beaten one egg and brush top of the dough. Bake for 20-25 minutes until golden brown. Take out and cool.

To serve, cut the scones across in half, spread with jam, the place a dollop of whipped cream on top.
