Ingredients

  • 4 cupsflour
  • 4 teaspoonsbaking powder
  • Pinchsalt
  • 1 1/2 cupsugar
  • 200 gsoftened margarine
  • 4large eggs
  • 2 tablespoonsvanilla essence
  • Softened Strawberry jam
  • Whipped cream

Steps

  1. 1

    Turn oven on to 180°C
    Grease a baking tray and dust with flour.

  2. 2

    In a large bowl, place flour, baking powder, salt, sugar and margarine. Rub together until it resembles crumbs.

  3. 3

    Beat eggs and vanilla essence and pour into the flour mixture. Mix together and knead for about five minutes to a soft dough.

  4. 4

    On a floured surface, roll out the dough with the palm of your hands, don't flatten it too thin or too thick. Then cut with a round cutter.
    Place the cut dough on a greased baking tray.

  5. 5

    Lightly beaten one egg and brush top of the dough. Bake for 20-25 minutes until golden brown. Take out and cool.

  6. 6

    To serve, cut the scones across in half, spread with jam, the place a dollop of whipped cream on top.

    Voila 👌
