My first attempt at baking for about 15 years turned out pretty well. Lots of cocoa and beetroot make them really indulgent.

My first attempt at baking for about 15 years turned out pretty well. Lots of cocoa and beetroot make them really indulgent.

Preheat the oven to 180c and line a muffin tray with paper cases

In a bowl beat the eggs lightly, then add the oil, milk and sugar and whisk until smooth

Sieve the flour into the bowl and whisk till smooth
- 4
Purée the beetroot

Then add the beetroot and dark cocoa powder. Taste and adjust quantities. Whisk in some air to get a good rise.

Fill the muffin cases and bake for 25-30 mins. The muffins should be firm to touch and when a knife inserted comes out clean

Serve and enjoy
