I love leeks. I would put them in every meal if I could so these muffins are the perfect opportunity to try something new that isn't quite so sweet.

I love leeks. I would put them in every meal if I could so these muffins are the perfect opportunity to try something new that isn't quite so sweet.

Heat oven to 180c fan.

Line a muffin tray with paper cases

Beat the eggs in a large bowl
- 4
Add the oil and milk and beat until just combined
- 5
Add the sugar and whisk until smooth

Finely chop the leek
- 7
Grate the cheese
- 8
Add the leek and Cheese to the bowl and mix. The mix should be a smooth consistency- add a dash more milk if not.

Fill the muffin cases 2/3 full and bake for 25-30 minutes

Leave the muffins in the tin to cool for a few minutes and transfer to a wire rack to cool completely.
