Ingredients

  • ==Papaya Salad Dressing (Yum Sauce)
  • Dried or cooked shrimp, as desired
  • About 10 Thai bird’s eye chilies
  • 3small garlic cloves
  • 1-2 tablespoonspalm sugar (or 1-2 tablespoons brown sugar)
  • 2 tablespoonsfish sauce
  • 2-3 tablespoonslime juice
  • 1 tablespoontamarind juice
  • 2small Roma tomatoes
  • ---------
  • Green papaya, as desired
  • Carrot, as desired
  • Long beans (yardlong beans), as desired
  • Roasted peanuts, as desired

Steps

    Shred or julienne the green papaya and carrot. Cut the long beans into short pieces.

    Prepare all the ingredients and have them ready to use.

    Make the dressing: Lightly pound the chilies, garlic, and long beans together. Season with lime juice, fish sauce, and palm sugar. Mix well and adjust to taste. Add tomatoes, dried shrimp, and roasted peanuts, then toss to combine.

    Lightly moisten Vietnamese rice paper wrappers with water, then fill with papaya, carrot, and long beans.

    Roll up tightly, then cut into bite-sized pieces and arrange on a plate.
