Simba aloo saru besara
A very authentic dish of Odisha made with mustard paste .
Steps

Cut both end of flat bean & de-vein it. Cut into 2 pieces length wise.

Peel off the potato, arum & cut into pieces similar to that of the flat beans. Wash the vegetables.

Make a fine paste of mustard seed, cumin, garlic, green chilli & a little amount of water.

Heat kadhai, add vegetables, tomato, salt, turmeric powder, mustard paste, 1-1.5 cup of water.

Bring it to a boil & cover lid. Cook in simmer till tender.

Remove from heat and keep aside.

Heat oil in a kadhai. Add broken red chilli & panch phutan. Let it crackle.

Now add onion.saute well. Now add boiled vegetables to it.

Stir fry for 2-3 min in high flame. Make it dry.

Now add chopped coriander leaves. Mix well. Switch off gas.

Enjoy hot with steamed rice.
