Heat oil in a pan over medium flame. Add garlic, green chilli and ginger. Sauté it

Add chopped onion and sauté until it turns to light brown colour.

Add haldi and red chilli powder, dhania powder, stir and mix well

Add tomaoes and stir it until oil separates.

Add chopped palak and salt to taste.

Cook until palak becomes soft. Stir in between occasionally

Now add cubed potatoes, garam masala and mix well.

Cook covered on low flame for 4-5 minutes. Stir in between occasionally to prevent sticking and burning. Turn off the flame.

Transfer dry aloo palak to a serving bowl and serve it hot with Roti.
