Sashimi ‘Zuké Don'

In Australia, less expensive off-cut meat is widely available. In Japan, you can find less expensive off-cut Sashimi. I used to make this ‘Zuké’ Don using those off-cuts. If you can purchase Sashimi quality fresh fish, why don’t you try this deliciously marinated fish on rice. This time, I used Salmon.

Make the marinade first. Place Mirin, Soy Sauce, Wasabi and Grated Ginger in a small bowl and mix well.

Slice Fish Fillet into small pieces and add to the marinade. Rest in the fridge for at least 30 minutes.

Half fill a bowl with freshly cooked rice, cover with the Toasted Nori and place marinated fish pieces on top. Place some finely sliced Shiso or chopped Spring Onion, and/or other condiments of your choice and enjoy.
