Ingredients

3 servings
  1. 350 gramsSweet potato
  2. 2 tbspKatakuriko
  3. 1 tbspSesame seeds
  4. 3 tbspSoy sauce
  5. 3 tbsp◆ Sake
  6. 2 1/2 tbspSugar
  7. 1 tbspMirin

Cooking Instructions

    Peel the sweet potatoes, cut into match sticks (as you would for French fries), then soak in water for 15 minutes to remove any astringency.

    Combine the ◆ ingredients in a pan, bring to a boil, then add the sesame seeds. Be careful not to boil for too long, or the flavor will be too strong!

    Blot the excess water from the sweet potato sticks with a paper towel and coat in katakuriko.

  4. 4

    Deep-fry the sticks in oil heated to 355F/180C for about 3 minutes until crispy, drain the excess oil, then coat in the sauce from Step 2.
