Dreamy Chicken And Rice Casserole

I was hungry late on a Monday night and started looking to see what I had. At first I was just going to steam some Lima beans and mix it with a package of rice. Then I saw I has one frozen chicken breast and decided I'll just put all 3 together. Then I remembered I also had a can of cream of chicken soup and that would add some creaminess to my meal. When I started making the soup I thought, I wonder how it would taste with some cream cheese. So I added the cream cheese and realized I wanted to go ahead and make it into a casserole and put some cheese on it. I started adding spices and came up with this blend. It tasted so good I had to add it here! All the ingredients were things I already had at home. As a single woman, making something for myself that I can take leftovers to work the next day is perfect.

Preheat oven to 375

Steam veggies and set aside

Cook chicken breast (best results in George Foreman grill to sear the juices)

Dice chicken to small pieces and set aside
- 5
Cook package of rice as directed and set aside. You can choose another flavor of rice if you wish. My favorite is Jasmine.

In medium saucepan, bring to a boil the soup, one can water and cream cheese, stirring until blended well.

Lower the heat and add all the spices stirring and taste testing to your desire.

Remove from heat

Add chicken, veggies and rice to the soup mixture and blend well

Pour casserole into 8x8 baking dish or round baking dish of similar size.

Add cheese over casserole evenly.

Bake for 20 minutes
