Ingredients

  1. 3 lboxtail, cut into serving pieces
  2. 2 lbox tripe, cleaned and cut into serving pieces
  3. 2 piecelarge eggplants, washed and cut about 2 inches each
  4. 1 bunchstring beans, cut about 2 inches long
  5. 2 bunchbokchoy, cleaned and washed
  6. 1 tspatchuete for color, add more if needed
  7. 1/2 tspsalt to taste
  8. 4 tbsppeanut butter, to thicken the sauce
  9. 1/2 largeonion, minced and set aside
  10. 2 packagesof Mama Sita's Kare-kare mix, dissolved and set aside
  11. 1/2 cupBarrio Fiesta Regular Shrimp Paste(bagoong alamang), to be served later

Steps

  1. 1

    Boil the oxtail for 2 hours or until tender. If you have pressure cooker, cook it for 45minutes max. Then add the ox tripe and onions and boil for another 1 hour.

    On separate pan, blanch the bokchoy, string beans and eggplant and set aside.

  3. 3

    If the meat is tender, put Mama Sita's kare-kare mix, atchuete, salt and peanut butter. Let it boil in low heat for 10 minutes stirring occasionaly.

    Serve with blanched veggies and shrimp paste over hot rice. Enjoy! :)
