Got bored with traditional roast, decided to try something new and it turned out so delicious. The meat was moist and the heat from the chilies was just right.
Cooking Instructions

Marinate the turkey with salt and pepper and let it rest.

Preheat the oven at 200°C
- 3
Heat olive oil in a hot pan and sear the turkey thigh skin side down until golden brown. Approximately 3mins each side.

Transfer the thigh to the baking dish. Saute the onions, garlic, ginger and chilies in the remaining oil.

Add the liquid ingredients and let it simmer.

Pour over the thigh and roast it in the oven for about an hour depending in the size of the thigh, basting every 20minutes.

Strain the liquid and further roast the thigh for 5 minutes for an extra crispy skin. Reduce the liquid until it thickens.

This dish orginates from Burgundy France and uses the wine produced there to flavor this much loved rich stew. My version here follows the traditional preparation to some extent, however I use homemade beef stock, in a larger amount and decrease the wine by almost half. We like the rich beef flavor to shine with the wine adding flavor. My spices are slightly spicier as well. This is a delicious hearty stew great with potatoes, pasta or rice for the amazing sauce. My family loves pan-seared salmon. Normally, we enjoy it with a brown butter and caper sauce, but this time I decided to try something different. We had bunches of fresh, sweet herbs in the fridge, and I had a hunch they'd work well with a little leftover apple juice.
