I made this delicious recipe with what I found in the fridge.

Boil the brown rice with the piece of onion and the garlic clove.

Finely chop the green bell pepper and cucumber.

Mix the bell pepper, cucumber, olive oil, salt, and pepper together.

Serve the rice and vegetables with a few slices of avocado on top. Drizzle with a little more olive oil.
