Ingredients

  • 1/2 stickbutter
  • 1/2 cupoil
  • 1onion, chopped
  • 1green pepper, chopped
  • 1red pepper, chopped
  • 4celery stalks, diced
  • 2 cupwhite rice
  • 1 can28 oz chopped tomatoes
  • 1 boxchicken stock
  • 2 cupred wine
  • 1thyme
  • 1black pepper
  • 1Cayenne pepper
  • 1cajun/creole seasoning
  • 1salt
  • 1 lbchicken breast, 1" cubes
  • 4links andouille sausage, 1/2" slices
  • 1 lbuncooked shrimp (shelled & cleaned)

Steps

  1. 1

    Melt butter with oil in heavy saucepan.

  2. 2

    Add chopped onion & saute for 5 minutes.

  3. 3

    Add chopped green & red pepper & diced celery, stir well and saute for another 5 minutes.

  4. 4

    Add rice & stir to completely incorporate into the sautéed vegetables.

  5. 5

    Add the diced tomatoes, chicken stock, wine & spices to taste. Stir until well mixed, cover and simmer for 30 minutes, stirring occasionally to prevent rice from sticking to the bottom.

  6. 6

    Add chopped chicken, sliced sausage & shrimp, stir well and cook for an additional 10 minutes.
