Combine basil, garlic, pine nuts in food processor and pulse u too coarsely chopped. Add1/2 cup of oil and process until fully incorporated and smooth. Season with salt and pepper

If using immediately, add all remaining oil and pulse until smooth. Transfer pesto to large serving bowl and mix in cheese

If freezing, transfer to air-right container and drizzle remaining oil over top. Freeze for up go 3 months. Thaw and stir in cheese
