Ingredients

  • 1 packagesZatarain's Red Beans & Rice
  • 1 can(8 3/4 oz )whole kernel corn, drained
  • 1 can(4 1/2 oz) chopped green chilis, undrained
  • 6(8 in) flour tortillas
  • 2 cupshredded cooked chicken
  • 2 cupshredded cheddar cheese
  • 1Assorted toppings: such as sour cream, salsa and chopped onion (optional)

Steps

    PREPARE rice mix as directed on package. Add corn and green chilis. Mix well.

  2. 2

    SPREAD 1/2 cup of the rice mixture on the bottom of a 13x9 inch baking dish sprayed with non-stick cooking spray. Top with 3 of the tortillas, overlapping as needed. Layer with 1/2 each of the remaining rice mixture, chicken and cheese. Repeat layering with remaining rice mixture, chicken and cheese.

    BAKE in preheated 350deg F oven 15 minutes or until heated thru. Let stand 5 minutes before serving. Serve with assorted toppings, if desired
