Idli is the best breakfast through out India especially in South India There are many types of idlies.
Rice idlies,rava idli(semolina),seviya idli,etc.
But I made this idlies by using maize rava.(coarsely ground yellow corn powder).
It came out well, soft and tasty.
Idlies are steamed food, easy for digestion.
It can be have by all person.
Best for breakfast.
This is my own innovative recipe.

Ingredients

For 2 persons
  1. 1 cupmaize rava(coarsely ground maize oowder)
  2. 1/2 cupfresh or sour curd
  3. 1 tspLemon juice
  4. 1 pinchbaking soda or 1/2 tsp of eno fruit salt
  5. Required quantity of water to make correct consistency of batter
  6. 1finely chopped green chilli
  7. 1/2 tspgrated ginger
  8. 10cashews
  9. 2 tbsp oil
  10. 1 tspghee
  11. 1 tspsugar
  12. to tasteSalt
  13. For tempering:
  14. 1 tspoil
  15. 1 tspmustard seeds
  16. 1/2 tspchana dal
  17. 1/2 tspudid dal
  18. 1pich of hing powder
  19. Few curry leaves

Steps

  1. 1

    Heat 1 tabsp oil in a pan,
    add the maize rava and roast till aroma comes.
    Remove the roasted rava in a mixing bowl and keep aside.

    In the same pan, heat 1 tsp ghee and fry the cashews.

    Remove and add to the mixing bowl.

  3. 3

    In the same pan, heat 1 tsp oil, add mustard seeds, let them crackle then add chana dal, udid dal,curry leaves and hing.
    ‎Fry till the dal become golden.

    Then add this whole mixture to the roasted maize rava.

  4. 4

    Add curd along with chopped ginger, green chilies and salt.
    Make the correct consistency of batter by adding required quantity of water which is neither thin or thick.Keep aside covered for 30 minutes.

  5. 5

    After 30 minutes, if the batter looks thick, then add a few tablespoons of water to get the correct consistency.

  6. 6

    Heat water in a pressure cooker.
    Just before steaming, add lemon juice,sugar,baking soda or eno in the batter and mix well.

  7. 7

    Pour the batter in greased idli moulds.

    place it pressure cooker,
    steam for 10 to 12 minutes.

  8. 8

    Check the doneness by inserting a toothpick.
    Pour 1/4glass of water over the idlis before removing them from the mould.

  9. 9

    Then remove the idlis from the mould and serve hot with coconut chutney and sambar.
