preheat oven 180°F C

melt margarine in a baking dish and then add apricot jam. mix until smooth
- 3
add the egg to the jam mixture and the ginger, stir well
- 4
add flour and baking soda and mix until well blended
- 5
sprinkle the brown sugar on your mixture and pour over the boiling water
- 6
bake for approximately 20 minutes or until golden brown
- 7
enjoy with either ice cream or custard or yoghurt.
