Remove any large stalks from the kale to leave with you some nice green leaves

Take approx two big handful per person as this will shrink when you cook it. You can of course adjust however you want, the amount here isnt important other than to know that it shrinks.

Soak in a large bowl of fresh water to ensure any earth is removed etc. It'll all drop to bottom of bowl as kale floats :)

Get a large oven proof dish and add a glug of olive oil (about a tablespoon)

At the kale to the dish and mix into the oil

Sprinkle liberally with salt and pepper and if you like, a lesser amount of sugar if you like a slight sweetness to it

Place in over at 190c for approx 20 mins.

Give a stir about half way through and then serve on completion. You want to check on it regularly as it will burn easily. It seems to be easier to cook when there is more kale than less. Enjoy.
