Mix all the ingredients for dough and rub this mixture between ur palms to make bread crumbs like texture.then make a soft dough by adding water. Don't over knead the dough at this time.Let it rest for 1/2 hour.meanwhile make stuffing for kachori.

Grind the soaked moong dal coarsely withou water and keep it aside.

Dry roast saunf,black pepper,cloves and coriander seeds,then make a coarse powder and keep it aside.

Heat oil in a pan..add jeera and black pepper coriander masala mixture,give it a stir,add heeng,ginger and green chillies,cook for few seconds then add besan and roast it till golden brown.

Now add red chilli powder,coriander powder,amchur,sugar and salt. Mix it well and add moong dal,cook it for 3-4 mins on low medium heat or till the mixture starts leaving the sides of pan. Stuffing is ready.

Now by adding 1 or 2 tsp oil in dough,knead the dough for 1-2 mins. Take a lemon size portion from dough and make make a small bowl like shape from this dough ball and stuff it with around 1 tbsp of dal mixture and combine all the corners of the dough and make a round ball.press it with light hands and make a small disc. Don't roll it with rolling pin.

Heat oil in a deep wok. Keep the flame on low medium.fry the kachoris till crisp and golden brown. Serve hot with ur choice of chutney or sauce
