Tlacoyos with nopales are a classic dish in Mexican cuisine. They're a great option if you want to try something different.

Dice the onion and tomato, then mix them with the nopales (which should be pre-cooked and chopped). Season to taste.

Wash and chop the cilantro, then set aside.

With clean hands, knead the masa a little and start shaping the tlacoyos.

Add a bit of refried beans inside the masa.

Seal and shape the tlacoyos with your hands. You can also use a tortilla press if you prefer. Place them on a preheated griddle (comal) over very low heat and cook on both sides until done.

Serve the tlacoyos hot, topped with the nopales, cilantro, cheese, and salsa.
