Steps

First apply oil on the brinjal and toast it in the heat.

Peel the black skin and mix it with salt.

Then in the cooking pan add azafoetida, mustard, urad dal in the heated oil. Then add grated green chilies, fry it properly then add to brinjal mix. Add coriander leaves.

Brinjal thuvayal is ready to taste.
