Ingredients

40 minutes
Serves 4 servings
  • 1monkfish tail
  • 4-5potatoes
  • Sweet paprika
  • 1bay leaf
  • 3-4small green onions (if they are small)
  • 4garlic cloves
  • 1little vinegar
  • Water
  • Parsley
  • Sea salt
  • Olive oil

  1. 1

    Remove the backbone from the monkfish and cut it into thick slices.

  2. 2

    Finely chop two garlic cloves and a handful of parsley together.

  3. 3

    Season the monkfish with salt and add the chopped garlic and parsley. Rub with olive oil and coat well. Set aside.

  4. 4

    Take a pot and break the potatoes into bite-sized pieces (make a cut and then break them apart).

  5. 5

    Add the green onions, a few sprigs of parsley, and the bay leaf.

  6. 6

    Cover with water and drizzle with a little olive oil. Add salt, cover the pot, and simmer over medium-low heat for 12 minutes.

  7. 7

    After this time, remove the parsley and add the fish with its marinade.

  8. 8

    Cook for 8 minutes, turning the fish halfway through.

  9. 9

    Once done, set aside.

  10. 10

    In a small skillet, thinly slice the remaining garlic cloves. Sauté them in plenty of olive oil.

  11. 11

    When they start to sizzle, add a splash of vinegar, a little of the fish cooking broth, and then a tablespoon of sweet paprika. Do this last step off the heat, stirring constantly.

  12. 12

    To serve: arrange the monkfish, potatoes, and green onions on a plate and pour the garlic-paprika mixture over the top.
