A different kind of a vegetarian dish(without onion and garlic), that can be relished during any upvas.
Steps

Take a mixing bowl and add the grated carrots, boiled and mashed potatoes, grated paneer, ginger paste, 1/2 teaspoon of salt, chopped green chillies. Mix them altogether.

Add the besan and again mix it well. You may add a little more if you feel that it is required.

Heat some oil in a wok. Make some balls from the kofta mix, and add in the wok.

At first, cook them in a low flame for some time. Then increase the flame to fry them upto golden brown.

Remove them from the wok.

In the same wok, add some oil if required. Add the green cardamom, bayleaf and dry red chillies.

Saute it for a moment untill the aroma comes out.

Add the turmeric, ginger paste, coriander powder, red chilli powder and saute it for a moment.

You may add 1/4 cup of water if you feel that the masalas r about to burn.

In a bowl, beat the curd well with some salt and sugar.

Add it in the wok. Mix it very well.

Cook it untill the raw aroma dissapears.

Add some water. Bring it to boil.

Check the salt and sugar. Add some if required.

Add the raisins and garam masala powder.

Add the koftas and mix them very well with a light stir.

When you get the desired consistency, add the ghee and remove it from the flame.

Your carrot kofta curry is ready to be served.
