Heat the olive oil in the frying pan or wok

Add the onion and fry for 1 minute then add the garlic and fry for 1 minute

Add the rest of the veg and chopped chilli except the peppers as you want them crunchy

Fry for 5 minutes then add the peppers for the last minute.

Serve as a side dish sprinkle some fresh parsley on top
