Ingredients

  1. 2.2 lbs (1 kg)fine semolina or very fine semolina flour
  2. 1 cup(2 sticks/225 grams) softened unsalted butter
  3. 1 cup (225 grams)ghee or vegetable shortening (can substitute with more butter)
  4. 3 tablespoonssugar
  5. 1 tablespoonmahlab spice
  6. 1small cup (about 1/4 cup/60 ml) orange blossom water mixed with rose water
  7. Extra orange blossom water and rose water for kneading the dough
  8. 1 teaspoonyeast
  9. For the filling:
  10. 2.2 lbs (1 kg)dates, pitted and chopped
  11. 2 tablespoons(about 1/4 stick/28 grams) butter
  12. 1 teaspoonmahlab spice
  13. For garnish:
  14. Powdered sugar, as desired

Steps

    To prepare the dough, combine the semolina, butter, ghee, sugar, and mahlab mixed with orange blossom water and rose water.

  2. 2

    Rub the ingredients together well until the semolina absorbs all the fats. Knead the dough every hour or two until it becomes soft and pliable.

    Let the dough rest overnight.

  4. 4

    The next day, add the yeast to the dough and let it rest for 1 hour. Then knead it with orange blossom water and rose water (about 1 small cup of each).

  5. 5

    Prepare the filling by shaping the dates into small balls to use as filling for the maamoul.

  6. 6

    Shape the dough as desired, fill with the date balls, and place on a baking sheet. Bake in a preheated oven at 350°F (180°C) until golden and cooked through.

    Dust with powdered sugar as desired and enjoy.
