From the freezer to table strip steak

Read this in cooks illustrated and was skeptical so me and my wife gave this a try and you know what it wasn't bad at all couldn't really tell the difference from a thawed steak. Blew us away!! Now a fresh steak obviously going to be great but if you have some frozen give it a try I think you'll be as plentiful surprised as we were. For this recipe I just wanted to see for myself so limited the ingredients to a bare minimal and still was good crazy!!!

Steps
- 1
One frozen steak directly out of freezer. Rinse steak under cold water if any ice crystals are present salt and pepper to preference.
- 2
Place steak in preheated pan med/high heat with,2-3 tablespoons of oil. Let oil come up to temp 1-2 mins.
- 3
Sear 2 mins. on all sides.
- 4
Smells wonderful dogs in full sniff mode!!!

- 6
- 7
Place on baking pan.
- 8
Insert leave in thermometer and set to 135 degrees. Only at 36 degrees after 8 minutes of sear crazy!!
- 9
Place a preheated oven set to 275 degrees.
- 10
Achieved this temperature after 40 minutes. Remove and cover loosely with tin foil and let rest for 10 minutes.
- 11
Nice medium rare. If we didn't try it we wouldn't of believed it either.
- 12
May God be so kind to bless us all!!!
