Peppered Cow Legs

Cow legs or Brokoto as popularly know here in Lagos Nigerian is absolutely delicious to eat in soups, sauces and stew.
It very crunchy and chewy so its a more healthier option for people who don't really want pure beef.
When my hubby is having his friends, I like to pepper it up, so they can chew with some chilled beer or wine...
Totally delish even if I say so myself...

Steps

Firstly cow legs are tough and don't.cook easily...
So.wash properly and cut into big chunks and cook in a pressure pot till almost tender.
Now you can season and spice it up with some salt, shallot, onions, garlic, ginger, a pitch of black pepper and one cube of any seasoning of your choice.
Cover up and cook till the meat and skin is very tender and can easily come of the bones. - 2
Next put all the other ingredients in a blender and blend but don't make it very smooth..
I.another pot, pour in about 1 cooking spoon of the vegetable oil and pour in the blended ingredients and allow to cook till it become thick...
Salt the sauce too. - 3
Add in the already cooked and de bones cow legs
Add some black pepper, (for that extra heat and smokey taste) garlic, diced ginger, some shallot, taste for salt and...crumble the remaining seasoning cube over it and cover it for a minute to allow the meat soak in the peppery sauce...Stir and remove from fire..
