Black Bean and Sweet Potato Chili - CROCKPOT

Ingredients

  1. 1 lblean ground beef, browned
  2. 1red or orange bell pepper, diced into 1/2" chunks
  3. 1 lbsweet potato, peeled and diced into 1/2" chunks
  4. 1 cupBlack Bean and Corn salsa
  5. 1 Tbsponion flakes
  6. 2 Tbspdried parsley
  7. 1 Tbspdried oregano leaves
  8. 2 tspchili powder
  9. 1 canblack beans (undrained)
  10. 1 canchili beans (undrained)
  11. 3 TbspBetter Than Boullion brand roasted beef base
  12. 3 Tbspcorn starch
  13. 4 cupswater (reserve 1 cup for corn starch)

Cooking Instructions

    In a shaker container, dissolve the cornstarch in the 1 cup of water that was reserved. Pour that and the remaining 3 cups water with all other ingredients into a crockpot. Give it a stir and cook on low for 4 -6 hours.

    Top with crumbled tortilla chips, shredded cheddar cheese, sour cream and cilantro if desired. Serve with a slice of lime.

As a mom of two teen boys (one of which does not eat onions, peas, beans, and most other cooked vegetables) and a wife to a man who is always hungry, getting an evening meal together can be a challenge - especially when working full time outside the home and trying to schedule around the activities of a busy family. A crockpot and a microwave are my most used appliances, and I'm a freezer cooking fan.
