Ingredients

30 mins
4 servings
  1. 1/2medium yellow onion
  2. 1bell pepper
  3. 8 ozmushrooms
  4. 1 tbspolive oil
  5. 12 oz.vegan chorizo
  6. 28 ozcanned tomatoes
  7. 28 ozcanned kidney beans

Cooking Instructions

    Dice onion, and slice bell pepper.

    Warm olive oil in a medium-large soup pot. Add onion and bell pepper and sweat until translucent.

  3. 3

    Remove chorizo from casing, and crumble it into the pot.

  4. 4

    Slice up the mushrooms and add them to the pot.

  5. 5

    Dump in your tomatoes. Make sure to break them up with a spatula or a wooden spoon if they're not already crushed.

  6. 6

    Rinse the kidney beans and stir them into the pot.
