Soup of the Day Friday, for Helen
The kale will be just a bit crunchy, you can serve it up with some crusty bread. For Helen I hope you enjoy!!!
Cooking Instructions

Brown the ground round with the onions. Don't drain. Add the butter.

Getting to the butter next.

Wash the potatoes and dice. Add to a pot with the water and the kosher salt, add the kale.

Kale will be right on top. It will wilt just a bit.

Add the ground round and onions. Then season with the rest of the spices. Mix well but don't over do keep the red boiled potatoes intact.

Cover and boil till the potatoes are fork tender.

Add the Horseradish sauce and sour cream to the mashed potatoes

Add the mashed potato mixture to thicken the soup. If too thick thin with some milk. Add a cup at a time.

Stir it will thicken just a bit, serve.

Its just about fall season here in Florida. Usually I make chili to start out the chilly season ahead this year I wanted to start different. Usually the fall and winter months are full of carbs, I am on a low carb diet. Beans are full of carbs, so i made this low carb soup. Its hearty and delicious. I do hope you give it a try. This dish originally comes from Solo, a big town in Central Java, Indonesia. We call it Sunflower soup because its shape is similar as sunflower. The unique thing about this dish is only available/served in some wedding parties in Solo. So far I have never found any restaurants in Indonesia that have this dish on their menu. This is my first attempt to make it and it is very technical, but to see how the way it turns out and how delicious and fresh the taste is (my family loves it), I am sure I will cook this again in the future.
