Ingredients

8 servings
  1. 1 poundkale
  2. 1 poundground round
  3. 1large onion
  4. 1 poundred potatoes
  5. 1-1/2 quartwater
  6. 4 cupmashed potatoes made with milk
  7. 1 teaspoonkosher salt
  8. 1 teaspoongranulated garlic powder
  9. 1/2 teaspoonground white pepper
  10. 1/2 teaspoonground black pepper
  11. 1 teaspooncelery salt
  12. 1/2 cupsour cream
  13. 1 tablespoonprepared Horseradish sauce
  14. 1/2 stickbutter
  15. As neededchives to garnish
  16. As neededmilk if necessary for thinning of soup

Steps

  1. 1

    Brown the ground round with the onions. Don't drain. Add the butter.

    Wash the potatoes and dice. Add to a pot with the water and the kosher salt, add the kale.

    Kale will be right on top. It will wilt just a bit.

    Add the ground round and onions. Then season with the rest of the spices. Mix well but don't over do keep the red boiled potatoes intact.

    Cover and boil till the potatoes are fork tender.

    Add the Horseradish sauce and sour cream to the mashed potatoes

    Add the mashed potato mixture to thicken the soup. If too thick thin with some milk. Add a cup at a time.

    Stir it will thicken just a bit, serve.
