Ingredients

  1. 2.2 lbspotatoes (about 1 kg)
  2. 2.2 lbszucchini (about 1 kg)
  3. 1.1 lbscarrots (about 500 grams)
  4. 1.1 lbsonions (about 500 grams)
  5. 1medium head cabbage
  6. 1egg
  7. Salt
  8. Spices
  9. 1/2 cupall-purpose flour (about 60 grams)
  10. 1/4 cupchickpea flour (about 30 grams)
  11. 1 teaspoonbaking powder
  12. 2green chili peppers (optional, for heat)

Steps

  1. 1

    Finely chop the onions, slice the cabbage into thin strips, and grate the remaining vegetables.

    In a large bowl, combine all the vegetables with the egg, salt, spices, flours, and baking powder. Mix well.

    Heat oil in a pan. Scoop spoonfuls of the mixture and drop them into the hot oil, like making falafel. Let them brown, then flip to cook the other side.

    Fry all the mixture, then drain on paper towels. Serve with dakous or hot sauce.
