Cut the chicken and rub with lime juice and salt to taste. Place in the slow cooker. Set aside.

Slice all ingredients except for the red bird's eye chilies, which should be left whole, and bruise the lemongrass.

Then add all the spices to the slow cooker. Add a glass of water (you can add more if you like it soupy) and cook on the automatic setting.

Once cooked, taste and then serve. If you like it spicy, you can crush the red bird's eye chilies when ready to eat ☺
