Ingredients

  • 2 cupschopped cooked chicken
  • 1/2 tsphoney
  • 3/4 tspcumin
  • 1 tbspolive oil
  • 3 tbspchopped fresh mint
  • 1/3 cup (1 1/2 oz)goat cheese
  • 1 1/2 cupscooked Israeli couscous
  • 4bell peppers
  • 1 tbsplemon juice

Steps

  1. 1

    Cut tops off peppers and remove the inner seeds and membranes

  2. 2

    Broil peppers at 425°F until light charred on outside

  3. 3

    Peel the peppers

  4. 4

    Combine all other ingredients in a bowl

  5. 5

    Fill peppers with couscous mixture

  6. 6

    Broil for 4 minutes
