Large brinjals charred over an open flame are meshed and sauteed along with onion ,tomatoes red chilli powder and garnished with coriander.

Steps

Roast the brinjal on medium flame till well cooked and the skin has charred completely.

Cool, peel and mashe the brinjal.

Heat the oil in a nonstick pan and saute the onion till light golden brown.

Add chopped ginger and garlic and saute for minute and put chopped tomatoes,green chillies, kashmiri laal mirch powder, kalimirch powder and salt to taste and saute till the masala is cooked and oil rise to the surface.

Add the mashed brinjal and mixwell. Lower the heat and cook for four to five minutes.

Add the chopped coriander mixwell and serve hot. Enjoy with chapati or parnathas.
