Ingredients

4 servings
  1. 1 cupwheat macaroni pasta(boiled al'dente)
  2. 1medium spring onion
  3. 1/2roasted red bell peppers
  4. 1/2 bunchparsley
  5. 1/2yellow bell pepper
  6. 1/2green capsicum
  7. 1medium carrot
  8. 1/2 cupcorn kernels boiled
  9. 1 teaspoonolive oil
  10. 1 teaspoonwhite vinegar
  11. 1 teaspoondried oregano
  12. 1/2 teaspoongarlic powder
  13. 1/2 teaspoonmustard sauce
  14. 1 teaspoonfine sugar
  15. 1/2 teaspoonsalt or to taste
  16. 1/2 teaspoonfreshly cracked black pepper to taste

Steps

10 minutes
  1. 1

    Wash the vegetables and then cut into bite sized pieces (keep some red pepper thinly sliced; parsley removed from stems and chopped).

  2. 2

    In a small bowl whisk together the olive oil, vinegar, mustard sauce, oregano, garlic powder, salt, and pepper.

  3. 3

    Combine the cooked pasta, chopped vegetables, corn kernels and vinegar-olive oil mixture.

  4. 4

    Stir lightly until everything is well mixed and coated.

  5. 5

    Do the plating and serve immediately or refrigerate as per the liking.

    My tip
    This yummy and healthy salad can be prepared with any vegetables in hand or as per choice.
