Ingredients

  • 75 gwhite chocolate (melted & cooled slightly
  • 75 gplain flour
  • 50 gground almonds
  • halftsp baking powder
  • pinchsalt
  • Mix all dry ingredients together in a bowl, set aside
  • 75 gsoft butter/margarine
  • 150 gsugar
  • 2eggs
  • vanilla extract or paste
  • 50 gwhite chocolate chunks
  • 150 gfruit – frozen or semi frozen works better, cut it into pieces. Mango, plums and apricots all work well

Steps

  1. 1

    Cream together butter and sugar until it is white and fluffy

  2. 2

    Add the vanilla, and one egg at a time, beat well in between, the mixture will go quite thick and to the ribbon state.

  3. 3

    Add the melted white chocolate, and beat until combined.

  4. 4

    Add the dry ingredients, and beat until combined.

  5. 5

    Stir in the white chocolate chunks.

  6. 6

    Stir in half of the fruit.

  7. 7

    Tip the mixture into the lined baking tray.

  8. 8

    Scatter the remaining fruit over the top.
