Ingredients

  1. 2large eggplants
  2. 3 clovesgarlic
  3. Salt to taste
  4. 2 tablespoonstahini or more as needed
  5. 1/2 cupyogurt
  6. 1/2lemon
  7. 2 tablespoonsoil
  8. Pinchred pepper flakes for garnish

Steps

  1. 1

    Roast the eggplants.

  2. 2

    Once cooked, peel and finely chop them. Add mashed garlic, yogurt, a squeeze of lemon, tahini, and salt.

    Top with oil and a pinch of red pepper flakes.
