2-15 ozricotta
1an 1/2 cups milk
2eggs
1vanilla bean
1/2 tspMexican vanilla
1/4 cupmozzarella cheese
1/2 cupsugar in the raw
1/8 tsplemon oil, or 1 teaspoon of lemon extract
2 tbspcornstarch
Lemon zest
Cinnamon powder
Fresh nutmeg
2regular pie shells

Dissolve cornstarch in milk stir until smooth

Add ricotta cheese and mozzarella cheese, milk mixture,eggs vanilla bean, Mexican vanilla, lemon oil and sugar in the raw. Mix until smooth.

Pour into pie shells. Zest your lemon.now a little fresh nutmeg then sprinkle ground cinnamon on top

Bake 350 for 1 hour. This is a great desert pie with coffee and friends. Can't beat it enjoy my friends

I was an over the road truck driver for over 32 years I have been to every great state we have and 3 Canadian provinces been to Mexico many times and I have EATEN SOME OF THE BEST FOOD KNOWN TO MAN . when I would come home I loved to play in the kitchen ! I am rather good at it too. I also had a wife who was an Exilant cook and fairly good driver she taught me a lot
